Key of "Low Rider" pentatonic example you provide

In the written example you provide of "Low Rider" why do you have "G minor pentatonic" (with the assumed B flat major pentatonic)?

Since the key signature on your example has no sharps and no flats (the key of C), shouldn't the minor pentatonic be A minor (with C major as the major pentatonic)?

That's a very astute observation. I didn't bother with key signatures since most guitar players don't even know how to read them anyway. Just wanted to keep it simple and focus on the patterns and such.
